I’m trying to experiment with slow living at the moment and part of that includes slow eating – which is great news for me as I love my slow cooking with a passion. Not to mention that meat slow cooked is tender and tastier than anything cooked in haste.
As we move through in to Autumn and Winter my food posts are definitely going to take a more slow, nourishing and budget friendly direction.
Starting with this healthy slow cooked beef curry…
This recipe is great for the weekend, especially a Friday night when you’ve come home from work knackered and tempted to reach for the take away menu.
Prep time approx 15 mins
Cooking Time: 6/7 hours
6 long green chillies
454g Stewing Steak
2 garlic cloves, peeled and finely chopped
4 ripe tomatoes, quartered
1 tbsp ground cumin
1 tbsp garam masala
1 tsp ground turmeric
1 tsp sugar
1 tsp flaked sea salt
250ml hot water
1/2 tin chopped tomatoes
1 medium onion, cut into chunks
1 red pepper, deseeded and cut into rough chunks
2 tsp cornflour
Cut the stewing steak in to chunks.
Finely chop 4 of the chillies (deseed a couple or all if you don’t like very spicy food) the other two deseed or else it’s going to be way too spicy. Also chop the garlic, pepper, tomato and onion.
Add the beef and veggies to the slow cooker.
Next place the cumin, garam masala, turmeric, sugar and salt in to a measuring jug and add 250ml of hot water and mix…add this along with the 1/2 tin of chopped tomatoes to the beef and veg.
About an hour before you serve it, if you want your sauce a little thicker the add 2tsp of cornflour.
Cook on medium heat for 6 hours+ and serve with brown or wild rice.
